Instructions:
For the Dough:
- 1 cups Whole Wheat Flour
- Water (as needed)
- Salt (to taste)
For the Filling
- 1/2 Cup Broccoli Florets, pulsed in a food processor
- 1 Green Chili, finely chopped
- 1/4 Cup Coriander Leaves chopped finely
- 1 Tbsp Garam Masala Powder
- 1/2 Teaspoon Lemon Juice
- Salt (to taste)
- 1/2 Teaspoon Cumin Powder
Cooking method:
- Prepare Dough: Mix whole wheat flour and salt in a bowl. Gradually add water and knead to form a soft dough. Cover and let it rest for 15 minutes.
- Prepare Filling: Pulse the broccoli florets in a food processor until you achieve a coarse texture. Mix it with green chili, chopped coriander, salt, garam masala, lemon juice and cumin powder.
- Roll Out Parathas: Take a small portion of the dough, roll it into a ball, and flatten it into a small disc. Place a spoonful of the pulsed broccoli filling in the center.
- Bring the edges of the dough together to seal the filling and roll it into a paratha.
- Heat a pan or griddle. Place the rolled paratha on it and cook on both sides until it turns golden brown.
- Repeat the process for the remaining dough.
- Serve the broccoli parathas hot with yogurt or coriander mint chutney.
