Ingredients:
- 1 cup Brown Rice, soaked for 4-6 hours
- 31/2 cups mixed chopped vegetables - Brocolli, Green Capsicum, Peas. Spinach, Zucchini )
You may add veggies of your choice
- 1 Black Cardamom
- 2 Cloves
- 1 Bay Leaf
- 1 stick Cinnamon
- 1/2 tbsp Cumin Seeds
- 1 Mace ( Javitri), the inside netted part ( optional )
- Salt to taste
Cooking Method:
- Place a large pan on medium heat, roast the cardamom, cinnamon, cloves, cumin seeds, mace & bay leaf until the fragrance is released.
- Drain the water from the rice and add the rice to the pan and fold in the spice. Add 2 cups of water to the rice and bring it to boil.
- Reduce the heat and add all the vegetables and salt to the rice. Let it simmer until the water is fully absorbed into the rice. This should take about 15-20 minutes.
- Serve it hot with Vegan Curd
